Upon his arrival from Germany in the early 1970's, Charles Hoch, Sr. started his own cookie business in Blue Island, Illinois. Using the finest chocolate chunks (not chips) as was the tradition in Germany. The revolving ovens were placed in the front window of the bakery so customers could watch fresh, hot cookies coming out of the oven. The aroma must have been intoxicating. Later in the development of the business, Mr. Hoch began making and selling cookies in various shapes, decorated for all occasions-marketing towards children.

During the 1970's, The Cookie Factory Bakery became the first cookie stores located in malls in over 20 states-marketing was then geared to adults and children and the menu was expanded to include muffins, cinnamon rolls and other bakery items. The Cookie Factory Bakery remained true to the cookie recipes, as Mr. Hoch sold his company to the Sara Lee Corporation in the mid 1980's.

Today, The Cookie Factory Bakery franchise is being further developed and marketed by Breadeaux Pisa, Inc., a large regional pizza franchisor located in the Midwest.
